These delicious little muffins are great for an easy after-school snack. With all of its apple and cinnamon goodness, I especially love them in the Fall.
6 T butter (melted)
1 1/2 C flour
1tsp baking powder
1/2 tsp baking soda
1 tsp cinnamon
1/2 tsp salt
2 eggs
2/3 C brown sugar
1 1/2 C chunky applesauce
In large bowl mix flour, baking powder, baking soda, cinnamon, and salt. In a separate bowl, whisk together the eggs and brown sugar. Stir in the applesauce and melted butter until the mixture is smooth. Pour apple mixture into dry ingredients. Mix just until combined. Fill bake cups in muffin tins 2/3 full. Bake at 375 degrees for about 20 minutes. Yields approximately 16 muffins.
TIP: Since you will have more than enough batter to fill a regular 12-cup muffin tin, make sure to put water in each empty muffin cup (before baking) if you start a new tin. You will need just enough water to cover the bottom.
